chicken wings.....on the grill?

with the exception of my parents, who view chicken wings as some sort of state fair junk food along side funnel cakes, who doesnt like chicken wings? myself and mrs. fnp cook sure do. this was always something we went out for because who wants to fire up the fry daddy and attempt to burn your house down on a tuesday?
some hold the not so crazy notion that wings cooked any other way with the exception of frying will result in a soggy uncrisp skin. i agreed until i attempted to grill em up on the ol weber. Wow. I cant tell a difference between the grilled and fried version with the exception of a false sense that these grilled wings border on health food.
here is how to make em.
i use the drums although the flapper might work but I prefer drums.
wash the drums with cold water and place on paper towels. squeeze each wing with a paper towel to get as much moisture out of them as you can.
prepare the grill for indirect medium, about 300, grilling. use only half your burners.
place the wings on the portion of the grill that is off. cook for 30 minutes flipping them halfway. this cooks the inside of the wing. if you put them on a hot hot grill right away the outside wil burn with a not so cooked inside.
turn on the portion of the grill that is off and crank it up to medium high to high, about 450.
cook for another 20 mins until the skin in brown. watch the wings close so they dont burn. you will have to move em around etc, so dont leave the grill.

prepare for wing tossing.

melt a stick of butter in a bowl. you can add whatever flavor you like with the butter. last night i added 1/3 cup of louisiana wing sauce to the mix.

take the wings hot off the grill and sprinkle seasoining on them. the feeling no pain team uses a favorite rib rub that contains no sugar and it tastes great. use whatever you like.

put the wings now sprinkeled with what you like into the butter or butter / hot sauce mix. toss. serve.

Well there isnt much to read here so a few of my favorite sites:

The BBQ Forum
The self proclaimed "world famous bbq forum" has been around for a long time. They format is maddening as its almost as old as the forum itself. You have people from all over the country here and even some famous bbq guys you see on TV stop by and post.
Even world famous Dr. BBQ, Ray Lampe, decided to shit on me one day because I augmented a well known method for quick cooking a brisket. You would think he had better things to do, but oh well. His cookbooks I purchased in the past make excellent paper for my chimney starter.

The Texas BBQ Rub Forum
This is a forum with many more Texans on it. While not as active as The BBQ Forum, their forum software is from this decade and the follow posters are pretty chill.

The International Barbeque Cookers Assocaition
I am a card carrying member of this Texas centric organization. They have a forum and sanction most of the bbq competitions in Texas.

National Barbecue News
"World's Number One Publication Dedicated to the Sport of BBQ". They have a forum and make a great attempt to show all the different competitions from the different bbq associations with their calender of events.
